Pickling (processing) cucumber production is greatest in Michigan, Florida, North Carolina, Texas, Ohio, California and Wisconsin. A total of 103,570 acres of processing cucumbers were harvested in 1997, yielding 619,090 tons (average yield = 5.98 tons/acre), and a total value of $146,043,000. In 1997, production of processing cucumbers was up about 10% from 1996.
