California, Arizona, New York and Texas produced most of the U.S. fresh market and processing cauliflower crop in 1997. A total of 47,400 acres of cauliflower were harvested in the U.S. in 1997, yielding a total of 6,483,000 cwt (average yield = 137 cwt/acre), and a total value of $197,956,000. In 1997, production of cauliflower was down about 2.5% from 1996.
