NYMPHAEACEAE

Euryale ferox, Salisb. China: roots and seeds eaten. Chemical composition (dried seeds): Protein = 9.9%. Fat = 0.3%. Carbohydrate = 75.7%. Ash = 0.6%. Vernacular names: Chicken - Head, Fox -Nut. Ref. READ.

Nelumbium speciosum, Willd. India: root and seeds eaten. Australia (North Queensland): seeds cracked and eaten raw. Vernacular name: Pink Water Lilly. Ref. GAMMIE, IRVINE, WATT.

Nymphæa alba, L.; Nutt.; Patrin. ex Bunge; Turcz.; Walt. France: root recommended as a famine food after cooking in water and being flavored. Ref. PARMENTIER.

Nymphæa edulis, DC. India (Madras Presidency): roots and seeds cooked and eaten. It is noted that there are two or three varieties, distinguished by the coloring of the flowers. Vernacular names - Tamil: Shunguneer pushpum. Telugu: Koteka, Kalharamu. Ref. SHORTT.

Nymphæa Lotus, L.; Aubl. Guinea (upper): root used as a famine food, being either roasted in ashes or dried before being ground into flour. India (Bombay Presidency): roots and seeds eaten; elsewhere: occasionally the receptacles of the flowers eaten. Nigeria (Kano State, northern): rhizome and seeds eaten. Vernacular names - Hausa: Bado. Kanuri: Dambi. Ref. GAMMIE, IRVINE, MORTIMORE, WATT, UPHOF.

Nymphæa Lotus, L. var. pubescens, Willd. India: seeds of the fruit are also used in ordinary years by the Padharias and other peoples living near the Nal-Kantha, and in the interior of the Taluka. It is very often eaten in its raw state, when the fruits are green. When the fruits are dry, the seeds are removed, ground into a flour, and bread prepared from it. The flour is sometimes prepared into kanji. It is reported that about one seer (i.e. 2.06 pounds avoirdupois) is sufficient intake and that if more is taken it produces cold and cough. The root is also eaten, being baked or boiled with salt added. Chemical composition (grams per 100g): Protein = 9.3g. Fat = .78%. Carbohydrate (soluble) = 66.78%. Fibre = 5.81%. Ash = 6.32g Water = 10.94g. Calories = 319. Vernacular names (fruit) - Ghitola; (plant): Kumplis, Poena; (root): Kanda. Ref. PATON & DUNLOP.

Nymphæa stellata, Willd.; F. von Muell. Zululand (Ubombo district): tuber boiled for a short time and then eaten. India: roots and seeds eaten. Vernacular name - Zulu: Izibo. Ref. GAMMIE, HELY- HUTCHINSON, UPHOF, WATT.
