The plant has a long, fleshy tap root, similar to salsify, but black in surfacecolor, with white flesh. The leaves are entire and grass-like, but wider thangrass. The plant reaches 2 feet in height. The plant is perennial, but iscultivated as an annual. Culture is similar to that of other root crops, as salsify or carrots.
Production in the U.S.: No data, very limited.
Use: Roots as cooked vegetable. Leaves sometimes used as salad.
